SMPL: Curry Pad Thai

Todays sample comes from the Thai Spice Shack food truck on Monserat. Thai food both traditional and contemporary are popular at this truck, and here is one of those more contemporary items.

I always have trouble deciding between Pad Thai and a Panang Curry when going to a Thai place, and Thai Spice Shack has solved that problem once and for all with their Curry Pad Thai.

The best of both worlds. They take everything you love about Pad Thai, and mix it with the Thai curry of your choice (Red, Green, Yellow or of course my favorite Panang) to create a updated mash-up which is Thai-riffic.
